School is finally out, which means we can finally start to enjoy summer! Summertime is fun but it can pose some challenges. Like being out all day and then scrambling for dinner, which leads you to resorting to yet another burger or hot dog on the grill. Hmm, how many nights have you had a burger this week? Or, instead of waiting to have your glass of wine on the weekend, you enjoy one today (and tomorrow) because everyday feels like a Friday! And don’t forget the frequent trips to the ice cream shop. Before you know it, you’re wondering “why do I feel so bloated and why is my bathing suit so tight?

Last week, I hosted a Healthy Summer Strategies workshop: we had great fun tasting yummy foods, sharing recipes and learning healthy summer tips. The participants walked away with more than just happy smiles — they have a slew of quick recipes that will keep them lean, prepared for dinner plus simple and delicious plans for entertaining!  

This Avocado and Watermelon Salad with Jalapeno-Lime Dressing is one of the recipes that you will be getting. I chose this versatile recipe because it’s refreshing, nutrient-dense and a colorful dish to serve guests. The watermelon has lycopene, which acts as a natural sunscreen, protecting the skin from UV exposure. We know to that to have better absorption, it’s best to combine lycopene-rich foods — such as watermelon — with healthy fats from foods like avocados. So there you go: maximum flavor, maximum absorption. Plus a delicious lime dressing that you will be able to use for other salads or as a marinade. How’s that for efficiency in the kitchen 🙂

 

Avocado and Watermelon Salad with Jalapeño-Lime Dressing

Ingredients

  •       Watermelon Salad2 organic romaine hearts, chopped
  •       2 avocados, cut into 1/2” pieces
  •       2 cups watermelon, cut in 1/2” dice
  •       2 Tbs purple onion, finely chopped
  •       1 jalapeno, seeds and ribs removed, flesh minced
  •       3 Tbs fresh cilantro, finely chopped
  •       Juice of 2 limes
  •       1/4 cup extra-virgin olive oil
  •       1/2 Tbs honey (local is best – look for it at Pairings Wine and Food in Winchester)

Directions

In a small bowl combine jalapeno, cilantro, lime juice, olive oil, and honey. Whisk until well combined, and taste for seasoning. If the dressing seems too acidic, add more olive oil. If it seems too oily, add a splash of rice wine vinegar or more lime juice. In a large bowl combine the avocado, watermelon, onion, and lettuce. Toss with dressing right before serving.

Toss in some grilled or cooked shrimp for a complete meal.
