Curried Butternut Squash Stew

I have always loved food and cooking. I still remember my very first Peanut’s Cook Book and making Lucy’s Lemon Squares for my dad every Father’s Day.

When I became a nurse, I started learning more about the link between food and health. But it wasn’t until I became a mom that I started thinking of food as medicine. We lead such busy lives that committing to healthy habits can be a real challenge. Believe me, I know first-hand! To stay consistent, I created a healthy eating system for me and my family that was a practical, holistic way to eat well and enjoy life’s pleasures.

First: make this Curried Butternut Squash Stew — It’s what your body craves and if you use the frozen butternut squash, you can whip it together in 20 minutes!

Curried Butternut Squash Stew
Love this – so simple, great to freeze

Ingredients

  • 1 Tbs coconut oil or grapeseed oil
  • 1 red onion, diced
  • 1/8 tsp salt
  • 2 tsp fresh ginger, grated
  • 2 tsp curry powder
  • 1/8 tsp cayenne
  • 1 can unsweetened coconut milk
  • ½ cup water
  • 3 cups frozen butternut squash or fresh, cubed
  • 1 tomato, diced
  • ½ pound bok choy, chopped

Directions

In a saucepan, heat oil over medium heat. Cook onion with salt, stirring, for 3 minutes. Stir in ginger, curry powder and cayenne; cook for 1 minute. Add coconut milk and water; bring to a boil. Add butternut squash; simmer until tender, 15 minutes. Add tomato and bok choy; simmer 2 minutes. Season to taste.
